Description
Freekeh is a Durum wheat that is harvested while still green, and roasted over a fire. The husk is then removed by rubbing (fareek in Arabic, hence the name) which reveals an aromatic grain rich in flavour and texture, and full of protein and fibre.
Traditionally, freekeh is slowly simmered in stock to make a nourishing soup, or cooked with meat into a pilaf. Freekeh has been a Palestinian staple for centuries.
